Tra lavoro e vita quotidiana \u00e8 sempre stato tutto intrecciato,quindi la passione \u00e8 nata in modo naturale fin da piccolo.<\/p>\n<hr \/>\n<h3>Quali sono i ricordi o le esperienze pi\u00f9 significative legate a questo mestiere?<\/h3>\n<p>I ricordi sono tantissimi. Momenti belli legati alle feste in piazza, alle attivit\u00e0 con la famiglia e a situazioni in cui ci si trovava a lavorare tanto ma con grande spirito di squadra.<\/p>\n<hr \/>\n<h3>Qual \u00e8 il tuo prodotto del cuore e perch\u00e9?<\/h3>\n<p>Non ho un unico prodotto del cuore, perch\u00e9 nel mio percorso ho fatto pi\u00f9 esperienze, anche come cuoco. Mi piace sperimentare, creare nuovi prodotti e valorizzare tagli diversi, anche pi\u00f9 accessibili.<\/p>\n<hr \/>\n<h3>Come vengono creati i vostri prodotti e quali sono le particolarit\u00e0?<\/h3>\n<p>Molti prodotti della salumeria erano gi\u00e0 stati impostati da mio padre. Ogni tanto visitiamo anche le aziende agricole per conoscere meglio la filiera.<\/p>\n<hr \/>\n<h3>Quali sono le premesse per ottenere una carne di qualit\u00e0? In che modo il tipo di foraggio e l\u2019allevamento incidono?<\/h3>\n<p>La base di tutto \u00e8 l\u2019alimentazione e il benessere dell\u2019animale. Il foraggio e il pascolo fanno davvero la differenza: un animale che vive bene, si muove e cresce in modo naturale d\u00e0 una carne di qualit\u00e0 decisamente superiore.<\/p>\n<hr \/>\n<h3>Qual \u00e8, secondo te, la differenza tra un prodotto artigianale e uno industriale?<\/h3>\n<p>Il prodotto artigianale nasce dal gusto e dalla sensibilit\u00e0 di chi lo crea. \u00c8 qualcosa di personale. L\u2019industriale invece deve rispondere a un gusto pi\u00f9 ampio e standardizzato.<\/p>\n<hr \/>\n<h3>Che cosa significa per te lavorare con carne ticinese e far parte di questa filiera?<\/h3>\n<p>Quando possibile \u00e8 importante valorizzare il territorio. I tagli si adattano, ma alla base restano quelli tradizionali, anche se spesso vengono richiesti con nomi diversi.<\/p>\n<hr \/>\n<h3>Cosa diresti a un turista che viene in Ticino per la prima volta: cosa dovrebbe assolutamente assaggiare tra i vostri prodotti?<\/h3>\n<p>Sicuramente la luganiga e i nostri salumi, perch\u00e9 rappresentano davvero il territorio e hanno sapori che si trovano solo qui.<\/p>\n<hr \/>\n<h3>Secondo te, cosa scopre davvero un turista attraverso i sapori del Ticino?<\/h3>\n<p>Scopre che ogni piccola macelleria ha una propria identit\u00e0. Anche a pochi chilometri di distanza cambiano gusto, tradizione e interpretazione del prodotto.<\/p>\n<hr \/>\n<h3>Come vedi oggi la realt\u00e0 della macelleria artigianale in Ticino e il suo futuro?<\/h3>\n<p>\u00c8 un settore impegnativo. Oggi bisogna resistere, investire e reinventarsi.
